Barrel Aged Wild Ale Bottle Conditioned with Local Honey.
Theme is our Barrel Aged Wild Ale Bottle Conditioned with Local Honey. We use Fall Flower honey from Waid's Honey in Interlaken, NY to bottle condition this beer, produce small, fluffy bubbles that we love out of honey, and to also add a floral hint. This is a blend of beer aged in red and white wine barrels which add a subtle oak flavor. Theme could be seen as essentially the “base” of our other fruited variants. It is a great representation of what our house yeast culture will taste like without fruit. Flavors include wild yeast (brettanomyces), oak, citrus, and a mouth watering acidity.
Batch 2 is an aged extension of Batch 1, containing a large portion of the same exact beer, but aged another year. This blend contains beer aged in white and red wine barrels, with a small, young un-oaked component blended in for balance.
