Gin Barrel Pillow Talk
After traditional fermentation in stainless tanks, a portion of Pillow Talk was aged in gin barrels from Tommyrotter Distillery in Buffalo, NY. Eli Fish then blended the base beer with 10 unique strains of Brettanomyces to coax out huge tropical, funky, and barn-like flavors. The final blend rested to perfection for 6 months before bottling.
